Well, I figured it was about time to update this blog again, and I have some information that I need to dump out of my head, so this is probably a good place!
We're starting to venture into eating Paleo. We got a Paleo Mini Menu from Once a Month Meals and we're eating our way through the five meals.
So far we've eaten the Paleo Jalapeno Chicken Burgers, the Honey Pork Chops, and the Paleo Ranch Chicken Nuggets.
I would rate the jalapeno chicken burgers as a 3.5 out of 5. I would certainly eat them again, though they weren't my favorite, and they definitely were quite dry, and even though they had a jalapeno pepper and a fair amount of spices in them, they weren't very flavorful, and definitely needed some salt.
The honey pork chops had too much cinnamon. I would give those a 2.5 out of 5 for the first meal, and a 3 out of 5 for the leftovers (yes, they were better once reheated). I would probably cut the amount of cinnamon down next time.
The Paleo Ranch Chicken Nuggets were a disaster. Now, that could have been our fault because we didn't have any canned coconut milk, so we had to use unsweetened coconut milk beverage, and we also didn't have any almond flour. We used arrowroot instead. The "shake and bake" instructions didn't work for us, and the nuggets came out of the oven a sticky, goopy, glue-y mess. Also, even though I tripled most of the spices, they lacked flavor, and needed salt. I think we'll try these again, but this time try to follow the instructions to the letter.
Tonight we're going to try the Paleo Crockpot Mongolian Beef.
